Two for Tuesday: Peanut Butter Cookies

The coconut ladoos reminded me of a peanut butter treat I used to make as a kid–peanut butter balls.  I got this recipe from a feature for kids in the newspaper called The Mini Page some time back in the 1980s.


Peanut Butter Balls

1 cup peanut butter

1/2 cup honey

1 cup oats

1 cup coconut

Mix all together.  Shape into balls.  Roll in more coconut.  Chill and serve.  Yum!


I also made my sea salt peanut butter cookies for the holidays.


These are always a big hit.


Sea Salt Peanut Butter Cookies

So after I had that great sea salt peanut butter cookie from Joe Coffee, I had to make my own.  I used a flourless peanut butter cookie recipe and added sea salt.

Sea Salt Peanut Butter Cookies

1 cup peanut butter

1 cup sugar

1 egg

sea salt

Mix pb, sugar and egg.  Shape into balls and flatten with a fork.  Add a sprinkle of sea salt on top of each cookie.

Bake at 350 degrees for about 10 minutes.  Let these cool.  They are better the second day because they set.

Two for Tuesday: Peanut Butter Cookies

Do you take your peanut butter cookie with a sprinkle of salt or sugar?

A co-worker brought me a treat from Joe Coffee, a peanut butter cookie.  The cookie looks like a scoop of peanut butter ice cream with ridges.  It’s sprinkled with sea salt on top.  This cookie is one delicious peanut butter cookie.  It’s like a traditional pb cookie, with the addition of this lovely hint of sea salt.

Another co-worker introduced me to The Good Batch cookies, our favorite being oat chocolate chunk, which are to die for.  I decided to try another cookie of The Good Batch–Honey Bear, ground oat and peanut cookies filled with a honey and sea salt peanut butter, sprinkled with raw sugar.
