Pasta With Lentils

Pasta with lentils is a wonderfully comforting and healthy Italian dish.  This soup can also be served with rice.  Often I eat it with no rice/pasta so that it’s a low-carb, protein-packed treat!  However, I really like this version with broken spaghetti.  It’s especially good with some Italian bread and butter to dunk and a sprinkle of grated cheese.

Pasta With Lentils

1 lb. dry lentils

1 onion

diced carrots, to taste

diced  celery, to taste

1 clove garlic, minced

1/4 cup olive oil

about 10-12 cups of water

salt and pepper to taste

1 lb. vermicelli (or spaghetti), broken in 1-inch pieces

Prepare lentils according to package directions.  Add all other ingredients to large pot.  Simmer for 2 hours.  Cook vermicelli separately according to package directions.  (You don’t want to cook it in the soup because the pasta will absorb the water from the soup.)  Serve with grated cheese and Italian bread.
