I tried recreating the cannellini bean salad from Basilico in Millburn, NJ. Here is my version. It’s a very healthy recipe and perfect for vegetarians!
Cannellini Bean Salad
1 can cannellini beans, drained
8 oz. celery, chopped
sprinkling of grated pecorino romano
sprinkling of fleur de sel
generous sprinkle of olive oil
dash of parsley
As with any salad, add ingredients to taste. This is great on its own or with fresh Italian bread.
